Yet here we are, on the cusp of March, with longer days and the promise of warmer weather teasing us with the anticipation of outdoor adventures.

Spring is the perfect time to refresh and rejuvenate our homes. Today we are sharing  some handy spring cleaning tips that will help you usher in the new season with a clean slate and a renewed sense of energy.

Grilled Salmon with Garlic Herb Potatoes and Steamed Asparagus

This satisfying and flavorful dish is perfect for a special dinner or a casual weeknight meal. The combination of grilled salmon, roasted potatoes, and steamed asparagus creates a balanced and delicious plate that's sure to impress.

Here's what you need:

For the salmon:

  • 4 salmon fillets (about 6 ounces each)

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 tablespoon lemon juice

  • Salt and pepper, to taste

For the garlic herb potatoes:

  • 1 ½ pounds potatoes (such as Yukon Gold or red potatoes), cut into bite-sized pieces

  • 3 tablespoons olive oil

  • 3 cloves garlic, minced

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • Salt and pepper, to taste

For the steamed asparagus:

  • 1 bunch asparagus, trimmed

  • Salt, to taste

  • Lemon wedges, for serving

Instructions:

  1. Prepare the salmon: In a small bowl, whisk together the olive oil, minced garlic, lemon juice, salt, and pepper. Place the salmon fillets in a shallow dish or resealable plastic bag and pour the marinade over them. Make sure each fillet is evenly coated with the marinade. Let the salmon marinate for about 30 minutes in the refrigerator while you prepare the other components.

  2. Prepare the garlic herb potatoes: Preheat your oven to 400°F (200°C). In a large bowl, toss the potato pieces with olive oil, minced garlic, dried thyme, dried rosemary, salt, and pepper until well coated. Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until the potatoes are tender and golden brown, stirring halfway through cooking.

  3. Prepare the steamed asparagus: While the potatoes are roasting, bring a pot of water to a boil. Add salt to the boiling water, then add the trimmed asparagus spears. Cook for 3-4 minutes, or until the asparagus is tender-crisp. Drain the asparagus and transfer to a serving platter.

  4. Grill the salmon: Preheat your grill to medium-high heat. Remove the salmon fillets from the marinade and discard any excess marinade. Place the salmon fillets skin-side down on the grill grates. Grill for 4-6 minutes per side, depending on the thickness of the fillets, or until the salmon is cooked through and flakes easily with a fork.

  5. Assemble the dish: Arrange the grilled salmon fillets on a serving platter alongside the roasted garlic herb potatoes and steamed asparagus. Serve with lemon wedges on the side for squeezing over the salmon and vegetables.

  6. Serve the grilled salmon with garlic herb potatoes and steamed asparagus immediately, and enjoy!
