Chocolate Lava Cake
These chocolate lava cakes are perfect for a special occasion or whenever you're craving something sweet and chocolatey.

Here's what you need:
4 ounces (115g) semi-sweet chocolate, chopped
1/2 cup (115g) unsalted butter
1 cup (200g) granulated sugar
2 large eggs
2 large egg yolks
1 teaspoon vanilla extract
1/4 cup (30g) all-purpose flour
Pinch of salt
Powdered sugar, for dusting (optional)
Vanilla ice cream or whipped cream, for serving (optional)
Here's how you do it:
Preheat your oven to 425°F (220°C). Grease and lightly flour four ramekins or custard cups. Place them on a baking sheet and set aside.
In a heatproof bowl, combine the chopped chocolate and butter. Microwave in 20-30 second intervals, stirring in between, until the chocolate and butter are melted and smooth. Alternatively, you can melt the chocolate and butter in a double boiler set over simmering water.
In a separate mixing bowl, whisk together the granulated sugar, eggs, egg yolks, and vanilla extract until well combined.
Slowly pour the melted chocolate mixture into the egg mixture, whisking constantly until smooth.
Sift in the all-purpose flour and salt, and gently fold them into the chocolate mixture until just combined. Be careful not to overmix.
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
Bake the lava cakes in the preheated oven for 12-14 minutes, or until the edges are set but the centers are still soft.
Remove the lava cakes from the oven and let them cool in the ramekins for 1-2 minutes.
Carefully run a knife around the edges of each cake to loosen them from the ramekins. Place a plate on top of each ramekin, then quickly invert it to release the cake onto the plate.
Dust the lava cakes with powdered sugar, if desired, and serve immediately with vanilla ice cream or whipped cream for a truly decadent treat!
