How is March almost upon us when I am still recovering from Christmas??
Not gonna lie though, with only 2 weeks of Winter left and Spring just around the corner I am certainly looking forward to longer days and warmer evenings!

Thai Creamy Tom Yum Soup
Let’s cook up some Thai Creamy Tom Yum Soup, a comforting and flavorful dish perfect for chilly days:

Here's what you need:
4 cups chicken or vegetable broth
1 stalk lemongrass, trimmed and smashed
3-4 kaffir lime leaves
1 inch galangal or ginger, sliced
3 cloves garlic, minced
2 small red chilies, sliced (adjust to taste)
200g (7 oz) shrimp, peeled and deveined
200g (7 oz) mushrooms (such as straw mushrooms or button mushrooms), sliced
1 can (13.5 oz / 400ml) coconut milk
2 tablespoons Thai chili paste (Nam Prik Pao)
2 tablespoons fish sauce
1 tablespoon soy sauce
1 tablespoon lime juice
1 tablespoon brown sugar (optional, adjust to taste)
Fresh cilantro leaves for garnish
Sliced red chilies for garnish (optional)
Here's how you do it:
In a large pot, bring the chicken or vegetable broth to a simmer over medium heat.
Add the smashed lemongrass, kaffir lime leaves, galangal or ginger slices, minced garlic, and sliced red chilies to the pot. Let it simmer for about 5-10 minutes to infuse the broth with flavors.
Add the sliced mushrooms to the pot and let them cook for about 2-3 minutes until they start to soften.
Stir in the coconut milk and Thai chili paste (Nam Prik Pao) until well combined.
Add the shrimp to the pot and let them cook for about 3-4 minutes until they turn pink and opaque.
Season the soup with fish sauce, soy sauce, lime juice, and brown sugar (if using). Adjust the seasoning according to your taste preference.
Let the soup simmer gently for another 2-3 minutes to allow the flavors to meld together.
Once the soup is ready, remove the lemongrass stalk, kaffir lime leaves, and galangal or ginger slices from the pot.
Serve the Thai Creamy Tom Yum Soup hot, garnished with fresh cilantro leaves and sliced red chilies, if desired.
