Spring Vegetable Quinoa Salad
Elevate your springtime meals with this vibrant and nutritious Spring Vegetable Quinoa Salad. Packed with fresh vegetables, protein-rich quinoa, and zesty dressing, it's a perfect dish for a light and satisfying meal.

Here's what you need:
For the Shrimp:
1 cup quinoa, rinsed
2 cups water or vegetable broth
1 cup cherry tomatoes, halved
1 cucumber, diced
1 bell pepper, diced
1/4 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
1/4 cup fresh basil, chopped
1/4 cup feta cheese, crumbled (optional)
Juice of 1 lemon
2 tablespoons olive oil
Salt and pepper to taste
Here's how you do it:
In a medium saucepan, combine quinoa and water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until quinoa is cooked and water is absorbed. Remove from heat and let cool.
In a large mixing bowl, combine cooked quinoa, cherry tomatoes, cucumber, bell pepper, red onion, parsley, and basil.
In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Pour dressing over the quinoa salad and toss to coat.
Sprinkle crumbled feta cheese over the salad, if desired, and toss gently to combine.
Serve chilled or at room temperature. Enjoy your Spring Vegetable Quinoa Salad as a refreshing and nutritious meal!
