Heavenly Honey Lavender Cheesecake

After all those healthy snacks you allowed a treat!  Try our Heavenly Honey Lavender Cheesecake! Indulge in the dreamy combination of creamy cheesecake infused with delicate lavender and sweet honey, all resting on a golden graham cracker crust.

Here's what you need:

For the crust:

  • 1 1/2 cups graham cracker crumbs

  • 1/4 cup granulated sugar

  • 1/2 cup unsalted butter, melted

For the filling:

  • 3 (8-ounce) packages cream cheese, softened

  • 1 cup granulated sugar

  • 3 large eggs

  • 1/4 cup honey

  • 1 tablespoon culinary lavender buds, finely chopped

  • 1 teaspoon vanilla extract

  • 1/4 cup heavy cream

For the lavender-infused honey glaze:

  • 1/2 cup honey

  • 1 tablespoon culinary lavender buds

Instructions:

  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.

  2. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture evenly onto the bottom of the prepared springform pan. Bake for 10 minutes, then set aside to cool.

  3. In a small saucepan, heat heavy cream until it just begins to simmer. Remove from heat and stir in chopped lavender buds. Let steep for 10-15 minutes, then strain the cream to remove the lavender buds. Set aside.

  4. In a large mixing bowl, beat cream cheese and sugar together until smooth and creamy. Add eggs, one at a time, beating well after each addition. Mix in honey, vanilla extract, and the strained lavender-infused heavy cream until well combined.

  5. Pour the cheesecake filling over the cooled crust. Tap the pan gently on the countertop to release any air bubbles.

  6. Place the springform pan on a large piece of aluminum foil and wrap it tightly around the pan to prevent water from leaking into the cheesecake.

  7. Create a water bath by placing the wrapped springform pan into a larger roasting pan. Carefully pour hot water into the roasting pan until it reaches about halfway up the sides of the springform pan.

  8. Bake the cheesecake in the preheated oven for 60-70 minutes, or until the edges are set and the center is slightly jiggly.

  9. Turn off the oven and leave the cheesecake inside with the door closed for 1 hour to cool gradually.

  10. Remove the cheesecake from the water bath and refrigerate for at least 4 hours, or preferably overnight, until completely chilled and set.

  11. To make the lavender-infused honey glaze, warm honey in a small saucepan over low heat. Stir in lavender buds and let simmer for 5 minutes. Remove from heat and strain to remove the lavender buds.

  12. Once the cheesecake has chilled, drizzle the lavender-infused honey glaze over the top before serving. Slice and enjoy the dreamy delight of this Honey Lavender Cheesecake!
