Remember that amazing house you saw last month that got away?
Yeah, me too. That's the crazy housing market we're in! But don't worry, I've got some insights to share in this issue that might help you navigate the current scene, whether you're buying or selling.
Today I'm sharing a recipe that'll knock your socks off – the most delicious Thai Chicken Curry you've ever tasted. My mouth is watering just thinking about it! You know me, I love to cook, and this one is a guaranteed crowd-pleaser.
Speaking of crowds, have you heard about the amazing delicata squash gnocchi at Willow Restaurant?
I took my wife there last week, and let me tell you, it was next-level good. Forget your traditional potato gnocchi, these little pillows of heaven are bursting with the sweetness of delicata squash and come with all the bells and whistles – blistered tomatoes, brown butter, creamy goat cheese, and fresh sage. Divine!

Red Thai Chicken Curry
This flavorful and aromatic Red Thai Chicken Curry is sure to warm you up on a cold winter's day. Enjoy the rich and creamy curry with the perfect balance of sweet, savory, and spicy flavors!

Here's what you need:
1 lb (450g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
1 can (13.5 oz / 400ml) coconut milk
2 tablespoons red curry paste
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 onion, sliced
1 cup sliced mushrooms
1 tablespoon fresh ginger, grated
2 cloves garlic, minced
2 tablespoons fish sauce
1 tablespoon soy sauce
1 tablespoon brown sugar (optional, adjust to taste)
1 lime, juiced
1/4 cup fresh cilantro leaves, chopped (for garnish)
Cooked rice or noodles, for serving
Here's how you do it:
In a large skillet or wok, heat a tablespoon of oil over medium heat. Add the sliced onions and cook until they start to soften, about 2-3 minutes.
Add the minced garlic and grated ginger to the skillet, and cook for another minute until fragrant.
Stir in the red curry paste and cook for a minute, stirring constantly to coat the onions and garlic with the paste.
Add the sliced chicken pieces to the skillet and cook until they are no longer pink on the outside, about 5-6 minutes.
Pour in the coconut milk, fish sauce, and soy sauce, and stir to combine. Bring the mixture to a simmer.
Add the sliced bell peppers and mushrooms to the skillet, and let the curry simmer for another 8-10 minutes, or until the vegetables are tender and the chicken is cooked through.
Taste the curry and adjust the seasoning if necessary. If you prefer a sweeter curry, you can add a tablespoon of brown sugar at this point.
Squeeze in the juice of one lime and stir to combine.
Once everything is heated through and well combined, remove the skillet from the heat.
Serve the Red Thai Chicken Curry hot over cooked rice or noodles.
Garnish with chopped fresh cilantro leaves before serving.

What's the Forecast for the Sacramento Real Estate Market for into February 2024

The average sold price is trending down...it was 571,000 in January, down 3.2% from 590,000 the previous month and up 4.4% from $547,000 compared to last year.
1,780 homes sold in January, up 15.4% from 1,543 in January of 2023 and 11.7% lower than the 2,016 sales last month.
Versus last year, the total number of properties available this month is lower by 571 units or 13.9%. This year's smaller inventory means that buyers who waited to buy may have a smaller selection to choose from. The number of current inventory was down 10.5% compared to the previous month.
