Prawn and Mushroom Risotto
Let’s cook up some Thai Creamy Tom Yum Soup, a comforting and flavorful dish perfect for chilly days

Here's what you need:
1 cup Arborio rice
1/2 lb (225g) prawns, peeled and deveined
8 oz (225g) mushrooms, sliced (you can use a mix of different mushrooms for extra flavor)
4 cups vegetable or chicken broth
1/2 cup dry white wine
1 onion, finely chopped
2 cloves garlic, minced
2 tablespoons olive oil
2 tablespoons butter
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped, for garnish
Here's how you do it:
In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic and cook until softened, about 2-3 minutes.
Add the sliced mushrooms to the skillet and cook until they release their juices and become golden brown, about 5-7 minutes. Remove half of the cooked mushrooms from the skillet and set aside for later use.
In the same skillet, add the Arborio rice and cook for 1-2 minutes, stirring constantly, until the rice is lightly toasted.
Pour in the white wine and cook, stirring frequently, until the wine has been absorbed by the rice.
Begin adding the broth to the rice mixture, one ladleful at a time, stirring frequently and allowing each addition of broth to be absorbed before adding more. Continue this process until the rice is creamy and tender, about 18-20 minutes.
While the risotto is cooking, in a separate skillet, heat the butter over medium-high heat. Add the prawns and cook until they turn pink and opaque, about 2-3 minutes per side. Season with salt and pepper to taste.
Once the risotto is cooked to your desired consistency, stir in the reserved cooked mushrooms, grated Parmesan cheese, and cooked prawns. Cook for an additional 2-3 minutes, until everything is heated through and well combined. Adjust seasoning if necessary.
Remove the risotto from the heat and let it rest for a minute or two before serving.
Serve the prawn and mushroom risotto hot, garnished with chopped fresh parsley.
This creamy and flavorful risotto is sure to impress with its rich taste and comforting texture—a perfect dish to enjoy during the winter months!
